Egg Eatery
Rajesh sent in this idea. Sadly Rajesh didn’t have a website to link to for him but here is his idea.
Start a small restaurant only serving eggs. That is specialize in variety’s of eggs that are special. I have a place in Mumbai at Malad that does this.
We serve more than 60 different types of eggs and have a good rapport with our clients who visit us very regularly for various egg delicacies.
You can contact us or search your regular places around you and create your own menu as we did. Any help needed do contact us we also need some help.

I did a quick search online and found a wide variety of edible egg types that people enjoy. I’m sorry to say the wildest egg that I’ve had are duck eggs, but they are very nice. I’ve see the single ostrich egg massive omelets but I’ve never eaten one. Certainly an interesting niche idea for a place to eat.
